Spinach Balls

Ingredients

20 oz. frozen spinach, defrosted and well drained

5 eggs, well beaten

1 stick of butter, melted

2 1/2 cups seasoned bread crumbs

¼ cup fresh parmesan cheese, grated

½ teaspoon fresh garlic, minced

Dash of Tabasco sauce to taste

 

Method

  1. Place eggs, butter, bread crumbs, cheese, Tabasco sauce and garlic in a medium size bowl. With wooden spoon blend well.
  2. Add spinach and mix with your hands as you would making meatballs
  3. Using a small scoop, scoop out mixture and place on a paper lined baking tray.
  4. Bake at 350° for 15 min. Serve warm.Makes about 3 to 4 dozen depending on scoop size.
